There was no "Unlearn specialization" option for professions; you had to unlearn the entire profession itself and re-obtain it. A profession is a set of skills a player can learn by visiting a profession trainer. Said skills are meant to enchane the player's gameplay by providing him with various tools to better his World of Warcraft experience (i.e: an alchemist may make potions, which heal, restore mana or otherwise empower allies).

To change a profession, press "K" to show your skills and then find the profession you wish to unlearn, there will be a little O or X button that unlearns the profession. You will then be able to learn a new profession from a trainer but you will have to start it from scratch. Can confirm it works in WoW Classic!
But what happens then? As a developer, a note to WOW developers…any restrictions on features that are disliked by “gamers”, “customers” cause these to go elsewhere for their fun.
